Overnight oats aren't just for breakfast. In this savory take, you marinate the vegetables (in this case asparagus - but green beans work too) in a separate container overnight while your oats are doing their thing. Mix them together and you have yourself a lunch that will make your office mates jealous. —Liz | inspired by the seasons

What You'll Need
Ingredients
  • 1/4 cup oats
  • 1/4 cup plain almond milk
  • 1/2 cup plain Greek yogurt
  • 1/2 teaspoon tumeric powder
  • 1 tablespoon minced green onions
  • 1 Stalk asparagus, sliced into strips or french cut green beans
  • 1 teaspoon lemon juice
  • 1 teaspoon olive oil
  • 1/8 teaspoon ground black pepper
  • 1 tablespoon chopped pistachios for garnish
Directions
  1. Combine oatmeal, yogurt, milk, turmeric, pepper and green onions into a lidded jar with a 1 c capacity.
  2. In another lidded container add lemon juice, asparagus and olive oil.
  3. Place both containers in the refrigerator overnight or for 6 hours.
  4. Stir together the contents of both jars into a bowl and top with chopped pistachios.
