Tomato Sauce with Onion & Brown Butter

Recipe Off-Roading: Marcella Hazan's tomato sauce recipe is perfect the way it is but I did brown the butter a bit before adding the tomatoes. You could also brown the onion, add a bay leaf or fresh basil or oregano. But what a wonderful base recipe and a great quick week day meal. —Nancy Sawle Knobloch

What You'll Need
Ingredients
  • 28 ounces Organic Canned Imported Italian Tomatoes
  • 4 ounces Organic butter, unsalted
  • 1 Medium onion, peeled & halved
Directions
  1. Simmer butter and onion in the pan until the butter begins to brown then add the canned tomatoes. Simmer for 45 minutes, stirring occasionally and breaking up the tomatoes with wooden spoon.
  2. Remove the onions and blend with stick blender until smooth. Adjust for salt... I added another 1/2 teaspoon of salt but every can of tomatoes will have varying salt content.
