Coming at you with an simple yet amazingly flavorful pasta that doesn't take long to make! Pasta Primavera is an American made (italian inspired) recipe! It consist of veggies and a sauce made of the starchy pasta water , butter and lemon. Here's my take on this classic! —Carrie Cooper
Cherry Tomatoes sliced in half
squash thinly sliced
zuchinni thinly sliced
frozen, or fresh peas
lightly chopped flat leaf parlsey
cloves of sliced garlic
any other veggies you want
Seasonings and such
Parmigiano-Reggiano : as much as as your heart desires
Salt & Pepper
Dried Bay Leaves
Crushed Red Peppers
In This Recipe
Bring a pot of salted water to boil
- make sure the water is as salty as the ocean, we're using it in the sauce!
In a large saucepan add olive oil, shallots and garlic and cook over medium heat being sure to move around so they don’t brown.
Add zucchinis, tomatoes, crushed red peppers,basil and salt and pepper
While pasta is still cooking, take one cup of pasta water and pour into pan - add bay leaves and half of fresh squeeze lemon.
When pasta is al dente, take noodles straight from pot to pan, no need to strain it
