Fancy avocado toast

Avocado toast with soft boiled eggs —Dharma's Kitchen

  • Prep time 15 minutes
  • Serves 1
Ingredients
  • 1 Hass avocado
  • 1/2 Lemon, juice
  • 1-2 teaspoons Extra virgin olive oil
  • 2 soft boiled eggs
  • 1 teaspoon Black sesame seeds
  • 1-2 handfuls Spring mixed greens
  • 3-4 small medley tomatoes
  • 1 dash salt and pepper
  • 2 slices of multigrain toast

Directions
  1. In a medium sized sauce pan heat water until it boils. Using a spoon drop in eggs one by one so they don't crack and let boil for precisely seven minutes.
  2. While the eggs are boiling halve the avocado and cut into slices. The cut the tomatoes in half. Toast your bread.
  3. Once bread is toasted, assemble by in this order: Spring mix, avocado then tomatoes. You'll probably use 3-4 slices of avocado and 1-2 tomatoes per slice. Be sure to leave space for your egg. Combine lemon juice and olive oil. Lightly sprinkle over the veggies.
  4. Remove eggs from heat at exactly seven minutes and run under cold water. Remove shells and add the eggs to the toast. One egg per slice. Finish wish a dash of sesame seeds, salt and pepper.
