An easy weekday breakfast recipe for mornings you want something quick without sacrificing taste. —Oh.hi.food

What You'll Need
Ingredients
  • 1 Egg
  • 1/4 Yellow Onion
  • 2 Cloves of Garlic
  • 1/4 cup Mushrooms
  • 1/2 cup Kale
  • 1 tablespoon Oil
  • to taste Your favorite spices (I use salt, pepper, cumin, and paprika)
  • 1 splash Water
Directions
  1. Chop onion and mushrooms.
  2. Thinly slice garlic.
  3. De-rib and chop Kale.
  4. Saute the onions in a pan with the oil of your choice over medium heat until translucent .
  5. Add mushrooms and saute until soft.
  6. Add garlic and saute until just fragrant (about 30 seconds) and then add kale and and seasonings, saute another minute until tender.
  7. Create a small nest by pushing the majority of the ingredients away from the center of the pan leaving a small well in the center.
  8. Crack your egg in the well and season to taste.
  9. Add the water and cover with a lid until the egg is cooked to your liking.
  10. Serve with toast, avocado, a spicy crema, cheese, or anything else your heart desires!
