This salad is a typical WWE special -- lots of texture, pops of flavor and, of course, it's beautiful. Cherries are incredible right now, so make this salad ASAP! Serve alongside a grilled chicken or as a box lunch for an afternoon at the beach. —What We Eat Gals

Ingredients
  • Vinaigrette
  • 1 lemon, juice and zest
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon honey
  • 1 small shallot, minced
  • salt and cracked pepper, to taste
  • Salad
  • 1 cup cherries, pitted and quartered
  • 6 celery stalks, thinly sliced on the bias
  • 4 cups arugula
  • 1 tablespoon tarragon, roughly torn
  • 1/2 cup mint
  • 4 ounces goat cheese, crumbled
  • 1/2 cup pecans, lightly toasted and chopped
Directions
  1. Make dressing: Combine lemon juice, olive oil, honey, shallot, salt and pepper in a small bowl and whisk to incorporate.
  2. Build salad: Layer cherries, celery and arugula onto a serving platter. Sprinkle on tarragon, mint, goat cheese, toasted pecans, lemon zest and toss with dressing to taste. Finish with a pinch of Maldon if you feel so inclined. Enjoy!
