This pumpkin bread is the easiest thing to make when you have a midnight craving in the fall! Its so fluffy & soft while the outside has a craggily exterior that gets slightly crunchy when toasted. Its a perfect fall treat for day or night! Top it with chocolate and almond butter for a special pick me up! —Three Hungry Bellies

Ingredients
  • 6 ounces all purpose flour
  • 1 ounce almond flour
  • 1 tablespoon baking soda
  • 1 teaspoon salt
  • 2 eggs**
  • 4 ounces oat milk
  • 2 ounces oil
  • 15 ounces can of pumpkin
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • chocolate & almond butter (optional)
Directions
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Throw everything into a large bowl and mix it until you get a nice combined batter.
  3. Pour batter into a parchment lined bread pan and bake for 45 - 50 minutes or until the you touch the center and it pushes back or if you want them done quicker, use a muffin pan, spray them with coconut oil, and bake for 15 -18 minutes.
  4. ** Vegan version: Instead of using an egg, use 1 tablespoon of ground flax seeds and mix everything together as normal.
