Eggplant Subs

Breaded and fried eggplant slices tucked into a sub roll with tomatoes, onions, and fresh basil. Hearty and delicious, a vegetarian delight. —Dash of Amy

Ingredients
  • 1 small eggplant, sliced
  • 1 cup Italian bread crumbs
  • 1 egg
  • 1 tablespoon half and half
  • 1 tomato sliced
  • 1/2 cup finely chopped onion
  • 12 basil leaves, finely chopped
  • marinara sauce
  • mozzarella cheese
Directions
  1. Place bread crumbs in one dish, and beat the egg and half and half in another dish.
  2. Dip both sides of the eggplant slices in egg mixture first, then press into the bread crumbs.
  3. Heat a large skillet over medium heat and add 3-4 tbsp of olive oil until hot, then add the eggplant.
  4. Cook on each side until browned and fork tender, about 7-8 minutes total.
  5. Slice open sub roll and put under the broiler for 2 minutes.
  6. Place about 3-4 pieces of the eggplant in each sandwich, then top with sliced or shredded mozzarella cheese.
  7. Broil the sandwiches for 2-4 minutes until cheese is melted and bread is crispy.
  8. Top with marinara sauce, sliced tomatoes, minced onions, fresh basil, and salt.
