Wild Rice Salad with pinenuts & apricots

So many people have asked for the recipe of this rice salad - so here it is! There are quite a few ingredients but it's really worth it for that maximum flavour. —planchekitchen

  • Prep time 1 hour
  • Cook time 20 minutes
  • Serves 6
Ingredients
  • The rice
  • 300 grams Wild Camargue rice or Red rice
  • All the bits
  • 1 handful finely chopped dried apricots
  • 1 handful toasted pinenuts (can also substitute with crispy shallots)
  • 1/2 bunch roughly chopped coriander
  • 1/2 bunch roughly chopped parsley
  • 2 Juiced lemons
  • 2 splashes Soy sauce or Tamari
  • 1 splash Olive oil
  • 2 pinches Curry powder

Directions
  1. Steam the wild rice and let it cool.
  2. Chop/mix all the remaining ingredients. Mix together the soy sauce, olive oil, lemon juice and curry powder to make a dressing (the salad should be quite heavily dressed so add more if necessary). Dress the salad and add and of the ingredients - toss and ready to serve!
