So many people have asked for the recipe of this rice salad - so here it is! There are quite a few ingredients but it's really worth it for that maximum flavour. —planchekitchen

Ingredients
- The rice

300 grams
Wild Camargue rice or Red rice
- All the bits

1 handful
finely chopped dried apricots

1 handful
toasted pinenuts (can also substitute with crispy shallots)

1/2 bunch
roughly chopped coriander

1/2 bunch
roughly chopped parsley

2
Juiced lemons
-
2 splashes
Soy sauce or Tamari

1 splash
Olive oil

2 pinches
Curry powder
Directions

Steam the wild rice and let it cool.

Chop/mix all the remaining ingredients. Mix together the soy sauce, olive oil, lemon juice and curry powder to make a dressing (the salad should be quite heavily dressed so add more if necessary).
Dress the salad and add and of the ingredients - toss and ready to serve!
