Pasta with Creamy Beet and Goat Cheese Sauce

Creamy and delicious, this is a perfect alternative to marinara and will be sure to turn heads with its vibrant color! —What She's Cooking

What You'll Need
Ingredients
  • 8 ounces beet
  • 1/2 cup goat cheese
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1/4 cup chopped walnuts
Directions
  1. Cook your pasta according to directions
  2. Add all sauce ingredients to a blender or food processor and blend until the sauce is smooth and resembles a pesto-like consistency
  3. Season to taste with salt and pepper
  4. When the pasta is done, spoon the sauce over the noodles and gently fold it in, making sure it is evenly distributed
  5. Optional to garnish with mint or Parmesan cheese
