Vegetable and Chickpea Tajine

What You'll Need
Ingredients
  • 1/2 Onion
  • Salt and pepper, to taste
  • Couscous
  • 2 Garlic cloves
  • 1 Thumb-sized piece of ginger
  • 2 Zucchinis
  • 1 Carrot
  • 1 Medium sweet potato
  • 1 Red bell pepper
  • 1 400g can diced tomatoes
  • 2 400g cans chickpeas
  • 2 teaspoons Cumin powder
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Cinnamon
  • 3 tablespoons Olive oil
  • 50 grams Raisins
  • Couscous, to serve
Directions
  1. Mince the onion, garlic, and ginger. Slice the zucchini, carrot, and sweet potato into rounds (or half moons if large) and roughly dice the bell pepper
  2. In a large pot, sauté the onion, garlic, and ginger with olive oil until the onions begins turning translucent. Add the rest of the vegetables and sauté for about 5 minutes more
  3. Add the canned tomatoes, chickpeas, spices, and raisins. Cover with a lid and let it simmer for about 45 on low to medium heat, stirring occasionally. Season with salt and pepper to taste
  4. Cook couscous according to package instructions to serve with the tajine
