Mince the onion, garlic, and ginger. Slice the zucchini, carrot, and sweet potato into rounds (or half moons if large) and roughly dice the bell pepper
In a large pot, sauté the onion, garlic, and ginger with olive oil until the onions begins turning translucent. Add the rest of the vegetables and sauté for about 5 minutes more
Add the canned tomatoes, chickpeas, spices, and raisins. Cover with a lid and let it simmer for about 45 on low to medium heat, stirring occasionally. Season with salt and pepper to taste
Cook couscous according to package instructions to serve with the tajine
