Angel Hair Pasta With Sausage & Peppers

A light, but hearty pasta dish made with angel hair pasta, Italian chicken sausage, onions, peppers, white wine, and fresh basil. —Dash of Amy

What You'll Need
Ingredients
  • 16 ounces angel hair pasta, cooked and strained
  • 1 tablespoon olive oil (1 tsp for later)
  • 5 teaspoons Italian chicken sausages, cut in slices
  • 1 red onion, sliced thin
  • 1 orange pepper, cut in thin strips
  • 3 garlic cloves, minced
  • 1/2 cup white wine
  • 4 cups chicken broth
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 12 basil leaves, finely chopped
  • 1/2 cup fresh Parmesan cheese
Directions
  1. Cook the pasta, drizzle with olive oil, and place in a large baking dish. (BE CAREFUL TO NOT OVERCOOK!)
  2. Heat a deep skillet, add olive oil and sausages; cook until browned 4-5 minutes.
  3. Move the sausages to one side of the pan, drizzle other side with 1 tsp olive oil, add onions and peppers.
  4. Cook about 1-2 minutes, then add the garlic.
  5. Cook 2-3 minutes until peppers begin to soften.
  6. Add the white wine, broth, salt, and pepper; bring to a boil.
  7. Let flavors blend for a couple of minutes, then add the fresh basil.
  8. Pour sausage mixture over the pasta, mix well, then sprinkle with Parmesan cheese.
  9. Serve immediately!
