The perfect cucumber salad with blackberries, roasted pumpkin seeds and dill. Drizzled with a sour cream dressing. This cucumber salad is tasty and ideal for your meat and fish dishes. Although it’s perfect for lunch with a slice of bread. —Anna Chwistek | Serving Dumplings

What You'll Need
Ingredients
  • 1 cucumber
  • 1/2 cup blackberries
  • 3 tablespoons toasted pumpkin seeds
  • 4 stalks of dill
  • 4 tablespoons sour cream
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • salt and black pepper
Directions
  1. Peel the cucumber and cut into thin slices. In a bowl, add cucumber slices, blackberries and dill. Whisk the sour cream with oil, vinegar and honey, season with salt and pepper. Pour the sauce over the cucumbers and sprinkle with pumpkin seeds. Toss. Enjoy!
