Healthy, quick and easy chicken noodle stir fry packed with lots of veggies! I love this budget-friendly meal that takes less than 30 minutes from prep to serving. It’s nutritious, simple to make and versatile. For this recipe, I’ve used broccoli, cabbage and carrots as my choice of vegetables. —casuallypeckish

  • Prep time 10 minutes
  • Cook time 12 minutes
  • Serves 3
  • 300 grams Hokkien noodles (fresh)
  • 200 grams chicken breast strips
  • 2 cups cabbage (thinly sliced)
  • 1.5 cups broccoli (cut into small florets)
  • 1 cup clove of garlic
  • 1/2 brown onion (thinly sliced)
  • 1/2 tablespoon light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon brown sugar
In This Recipe
  1. Prepare and soak Hokkien noodles in hot water as per packet instructions.
  2. Whilst noodles are soaking, saute onion and garlic with 1 tbsp of oil in a hot, non-stick frying pan on medium/high heat.
  3. Pour 1/4 cup of water into the pan and place lid on. Cook for 3 minutes or until vegetables are soft.
  4. Same pan, add carrots, cabbage and broccoli and saute on high with remaining 1 tbsp of oil for 1 minute. This will add colour and flavour!
  5. Lift the lid off and allow water in the pan to evaporate. There shouldn't be much left in the pan.
  6. Once the water has been evaporated, push vegetables to the rims of the pan. Add sauteed chicken mixture, soy sauces, sugar and prepared noodles.
  7. Saute for 2 minutes, mixing constantly.
  8. Serve immediately!
