Author Notes

This cranberry sauce is substantial enough to stand on its own but is a great accompaniment to roasted turkey and pork dishes.

What You'll Need
Ingredients
  • 2 medium size red beets
  • 3 cups (or 10 oz bag) whole fresh cranberries
  • 2 Asian pears, peeled, cored and diced
  • 1 zest from a medium size orange
  • 1/2 cup maple syrup
  • 1/2 cup chopped walnuts, toasted in a hot pan
Directions
  1. Peel beets and cut in half. Shred in a food processor using the shredder blade.
  2. Place the cranberries, shredded beets, pears, zest and maple syrup into a large saucepan over medium heat.
  3. Stir frequently until the cranberries "pop" and the textures meld, about 10-12 minutes.
  4. Set aside to cool and thicken. Add walnuts just before serving.
  5. Serve immediately or can be prepared without walnuts 2-3 days in advance. Add walnuts just before serving.
