Ingredients
  • 4-5 zucchini
  • 300 milliliters whole milk (or oat milk)
  • 2 cups plain flour
  • 1 liter vegetable oil (for frying)
  • 1 pinch sea salt flakes
  • 1-3 lemon wedges (for squeezing)
Directions
  1. Prepare the zucchini by cutting into thin strips using a mandolin. You can do this by hand if you dont have a mandolin.
  2. Heat the vegetable oil in a saucepan.
  3. Dip the zucchini strips in flour, then in milk, before frying in batches for 2-3 minutes until golden. Frying in batches will ensure you don't overcrowd the pan, and will prevent soggy fries.
  4. Drain the fries on a few sheets of paper towel. Serve while hot, sprinkle generously with sea salt flakes and a squeeze of lemon juice.
