Frittata in a mug is an egg base loaded with veggies and cheese of your choice made ready in a few minutes using a microwave and a mug.

What You'll Need
  • 2 Egg
  • 1 tablespoon Green Bell Peppers, Finely chopped
  • 1 tablespoon Tomatoes, Finely chopped
  • 1 tablespoon Black Olives
  • 1 teaspoon Coriander Leaves, Finely chopped
  • 1 piece Cheese, Grated
  • 1/2 teaspoon Basil Leaves, Finely chopped
  • 1/4 teaspoon Oregano
  • Black Pepper, To Taste
  • Salt, To Taste
  • Cooking Spray/Oil To Grease
  1. Take a microwave-safe mug and brush oil inside the mug. Crack 2 eggs in the mug. Add salt and black pepper to taste. Whisk it with the help of a fork.
  2. Then add finely chopped veggies, 1 tbsp of green bell pepper, 1 tbsp of tomatoes, 1 tsp coriander leaves, ½ tsp basil leaves, and ¼ tsp oregano. Mix it well. Lastly, add grated cheese and give it a quick stir.
  3. Microwave it for about 1 minute and 50 seconds. Garnish the frittata with some coriander leaves, olives, and grated cheese.
  4. Your delicious frittata in a mug is ready to dig in. Let it sit for a while and serve the frittata with your favorite sides like toast, salad, coffee, tea or top it with salsa.
