If you ever end up in India, you’ll find Indo-Chinese food being sold in every other street. Somewhat Chinese-influenced food is heavily based on Indian spices. I didn't know what authentic Chinese food was like when I came to the US until I started going to China town for grocery shopping after watching hundreds of episodes of “ The Food Ranger” on youtube. The sauce I made for this recipe is Indian influenced Chinese sauce which I learned cooking back home during my high school years for my Indo-Chinese food cravings ??. The combination of crispy potato fries and slightly tangy and spicy sauce makes this recipe so darn delicious. This side dish is sure to please the Indian-Chinese food lovers. —FeastwithSafiya

Ingredients

Gold Potatoes

Cooking oil

Minced Garlic

Minced Ginger

Thinly sliced green chili

Corn starch

2/3 cup
Water

Chopped cilantro

Soy Sauce

1 tablespoon
Red chili sauce
Directions

Soak potato straws in hot water for about 15 minutes.

Drain the water and dry the potatoes. Heat oil on medium-high heat in a wok or fryer.

Fry the potatoes until golden brown and crispy. Set the fries aside. Dissolve corn starch into 2/3 cup water and set it aside.

Heat 2 tbsp oil in a medium saucepan on medium heat. Add minced ginger and garlic. Saute it for a few seconds. Add green chili and white part of green onions. Saute for a few seconds.

Add red chili sauce, soy sauce, and corn starch mixture. Cook it until the sauce thickens up. Add green onion and take the pan off of the heat.

Drizzle the sauce on fries and toss it well. Garnish with cilantro.
