Air Fryer Buffalo Cauliflower Tacos

I love buffalo chicken wings, but one of my favorite vegan restaurants in Philadelphia, PA. Bar Bombón, makes me not miss them at all.

This is a light, savory, and fiery recipe that will make you crave for more. —via.aldente

What You'll Need
Ingredients
  • Bean purée & Greek yogurt dressing
  • 1 can canellini beans
  • 1/4 onion minced
  • 3 pieces garlic minced
  • 1 teaspoon french dried thyme
  • 1/2 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 lemon juice divided in 2 parts
  • Salt and pepper to taste
  • 1 kirby cucumber
  • 1 tablespoon butter (unsalted)
  • 1/2 cup vegetable broth
  • 1 cup greek plain yogurt
  • Buffalo Cauliflower
  • 1 large cauliflower head chopped
  • 1 teaspoon salt
  • fresh cracked pepper
  • 2 tablespoons melted butter
  • 2 pieces garlic minced
  • 3/4 cup Franks hot sauce original
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • Flour tortillas
Directions
  1. Bean purée & Greek yogurt dressing
  2. Sauté over medium heat, onions and garlic until they are light brown, add canelli beans and mash them with a potato masher. Add broth, one part of the lemon juice, french dried thyme. Mix and let simmer until broth has been absorbed, adjust salt and pepper to taste.
  3. Chop cucumber in small pieces, mix in with yogurt, one other part of lemon juice and add onion and garlic powders. Adjust salt.
  1. Buffalo Cauliflower
  2. Chopped cauliflower in medium pieces, toss in a bowl with salt, pepper and garlic powder and olive oil. Place it in the Air Fryer at 390 for 20-40 min, pause it from time to time and toss around to make sure it gets evely "fried".
  3. Melt butter in the microwave, add minced galirc, onion powder, and buffalo sauce. Pour over the fried cauliflower and mix.
  4. Serve now: Heat up flour tortillas, spread the bean purée, add buffalo cauliflower, your favorite greens and the greek yougurt sauce. Enjoy!

Really tasty! I think the yogurt sauce could have been thinned a bit -- I used greek yogurt -- but you just can't argue with these flavors. Also...I did decide to roast the cauliflower instead of air frying. (375 degrees for 30 mins) because the giant head of cauliflower in my refrigerator would have overwhelmed an air fryer for sure.

It’s delicious, my son isn’t into the cauliflower but he didn’t even notice he was eating it. It’s pretty easy to cook and the air fryer gives it a different texture, better than the oil in a pan.

I’m so excited to tryout this recipe this weekend! I’m sad I found it after football season, but I’m betting it will become my go to (zoom) party dish this spring!

When I tried these, I could not belive they were cauliflower. The airfryer gives the most delightful light, crispy consistency that's better than any fried chicken. They're super quick and easy to make and you can customize the flavor to your liking. They can also be deceiving with how filling they are - I couldn't get past three! I highly recommend this recipe for a delicious, quick and easy dinner/snack.
