What You'll Need
Ingredients
  • Walnut Taco Meat
  • t teaspoons Garlic Powder
  • 1 teaspoon Smoked Paprika Powder
  • 1 teaspoon Cumin Powder
  • 1/4 teaspoon Salt
  • 1 cup Raw Walnuts
  • 1 piece Date, soaked and pitted
  • Quick Vegan Cashew Sour Cream + Taco extras
  • 1 cup Water
  • 2 cups Cashews, Soaked
  • 1 1/2 tablespoons Apple Cider Vinegar
  • 1/2 teaspoon Salt
  • 6 pieces Romaine lettuce leaves
  • 1 Tomato, medium, diced
  • 1 bunch Cilantro, chopped
  • 1 Bell Pepper, diced
  • 1/4 Red Onion, Chopped
Directions
  1. Walnut Taco Meat
  2. Add all the walnut meat ingredients into a high speed blender.
  3. Pulse until a taco meat consistency.
  4. Add into a bowl and set aside.
  5. Clean out the blender.
  1. Quick Vegan Cashew Sour Cream + Taco extras
  2. Add the water, cashews, apple cider vinegar, and salt into the blender and blend till smooth. If needed, add more water.
  3. Pour into a container and set aside.
  4. Assemble the tacos.
  5. Add the walnut meat to the middle of a leaf of romaine.
  6. Next, add the cashew sour cream, tomato, peppers, red onion, and cilantro.

I’m doing a raw vegan food cleanse for the new year and this was such a delicious, non-heavy and non-greasy dinner. Well seasoned and full of flavor. Will be eating regularly
