Date, soaked and pitted
- Quick Vegan Cashew Sour Cream + Taco extras

Water

2 cups
Cashews, Soaked

1 1/2 tablespoons
Apple Cider Vinegar

1/2 teaspoon
Salt

6 pieces
Romaine lettuce leaves

Tomato, medium, diced

Cilantro, chopped

Directions
- Walnut Taco Meat

Add all the walnut meat ingredients into a high speed blender.

Pulse until a taco meat consistency.

Add into a bowl and set aside.

Clean out the blender.

Add the water, cashews, apple cider vinegar, and salt into the blender and blend till smooth. If needed, add more water.

Pour into a container and set aside.

Assemble the tacos.

Add the walnut meat to the middle of a leaf of romaine.

Next, add the cashew sour cream, tomato, peppers, red onion, and cilantro.
