Savory Oats with Mushrooms and Spinach

Don’t believe oats are only for breakfast. These tasty Savory Oats with Mushrooms and Spinach will have you wanting them any time of the day.

Ingredients
  • 1 clove of garlic
  • 1/2 small onion
  • 1 large portobello mushroom, or 1/2 cup button mushrooms
  • 1 cup baby spinach leaves
  • 2 cups stock, warm
  • 1/2 cup steel cut oats, or wholegrain oats
  • olive oil spray
  • parmesan cheese to garnish
Directions
  1. Finely chop or mince garlic. Finely chop onion.
  2. Lightly spray a large frying pan with olive oil. Add garlic and onion and cook for a few minutes on medium-low heat until translucent
  3. I add the stock a tablespoon at a time to cook garlic and onion (instead of using lots of oil).
  4. When translucent, add chopped mushrooms and cook for about 3 or 4 minutes. Continue adding stock as necessary.
  5. Add chopped spinach and cook for a further minute.
  6. Add steel cut oats and stir to coat with mushroom mixture. Cook for one minute
  7. Add remaining stock (should be about 1½ cups). Cook and stir until oats are tender (I like mine with a little chew to them). This will take about 5-8 minutes depending on the type of oats you use.
  8. Season with black pepper and salt if needed. Garnish with grated parmesan cheese if using.
