I made this dish couple of weeks ago for few of my private customers and they absolutely loved it. It's very simple to make, is light, very tasty and flavorful. You can also add or substitute with other ingredients, like almonds with pine nuts, pistachios, pecans or sunflower seeds. Add olives or capers. —Madona Giorgadze
Ingredients

cauliflower

1 cup
feta

1 cup
toasted almonds, no skin

2 tablespoons
neutral oil

shallot

Handful
parsley

salt and freshly ground black peper

lemon juice and zest
Directions

Heat the oven to 425 F

Cut the cauliflower into small, bite size piece florets. This way they roast fast and easy to eat. Place them on a baking dish, drizzle the oil, season with salt and pepper, mix well using your hands so that they are coated with the oil and seasoning evenly and place the baking dish in the oven. Cook for 20 minutes until they are golden brown and crispy.

While the cauliflower is roasting in the oven, prepare the rest of the ingredients: crumble feta, chop the almonds, thinly slice the shallot and chop the parsley.

After the cauliflower is nicely roasted, move them into a large mixing bowl, add the rest of the ingredients, drizzle the lemon juice and gently mix.
