A deviled egg recipe that adds fiber and veggies that no one recognizes. —Lee
eggs, room temp.
baba ganoush (or fave hummus)
extra virgin olive oil
Boil water in a large pan. After it boils turn it off, add eggs carefully. replace lid and let stand for 13 minutes, longer if they eggs aren't room temp. Prepare bowl of ice water while you wait.
Remove eggs from hot water and place in a bowl of ice water for 5 minutes. Remove eggs. Peel. Cut in half long way. Carefully spoon yolk into a bowl. Place empty whites on a plate. With a fork, squish the yolks then mix in baba ganoush (or hummus). If the mixture seems too stiff or dry add olive oil 1 tablespoon at a time and mix in until you like the consistency.
Spoon the mixture into the waiting whites. Sprinkle with smoked
paprika to taste. Enjoy!
