Even though you can find snow peas around the year in the supermarkets, prepare this dish in spring and summer when peas are in season. Also, use new potatoes because they give the dish excellent taste and use lots of fresh herbs, like scallions, cilantro, and parsley. —Madona Giorgadze
Ingredients

snow peas, cut in half

medium potatoes, cut into inch pieces

2 cups
water

medium size tomato

Handful
cilantro and parsley

garlic clove

1 tablespoon
olive oil

salt and freshly ground black pepper to taste
Directions

Boil the potatoes with two cups of water in a saucepan for about 10 minutes on medium heat, covered.
Add the snow peas. Simmer for five more minutes.
Add the rest of the ingredients, drizzle of olive oil and turn the heat off.
