Chicken and Vegetables Skewers

A great simple recipe for your 4th of July picnic. Do not forget to prepare your favorite drinks and these amazing skewers will become the decoration of this day (except for fireworks, of course). —Anna Vorobiova

What You'll Need
  • For Skewers
  • 2 pounds chicken breasts
  • 1 cup bell peppers, chopped into cubes
  • 1 cup cherry tomatoes
  • For Marinade
  • 1/3 cup apple cider vinegar
  • 1/3 cup olive oil
  • 5 cloves of garlic
  • 1 teaspoon salt (or to taste)
  • 1 teaspoon mix of 5 peppers (or to taste)
  • 1 teaspoon fenugreek powder
  • cilantro for serving (optional)
  1. Mix equal proportions of apple cider vinegar and olive oil. Add the grated garlic and spices.
  2. Cut chicken breasts into cubes and put in the marinade with peppers and tomatoes for 30 minutes.
  3. Thread veggies and chicken onto the skewers in alternating patterns.
  4. Grill until tender. Sprinkle with cilantro before serving.
