Rosy Strawberry Vodka Soda

Make this sweet & sour soda for yourself, or in a giant batch (can also still be for self, just FYI) for those everything-is-reopening-but-let's-still-meet-indoors kind of summer gatherings.

What You'll Need
Ingredients
  • 1 1/2 tablespoons strawberry coulis or purée
  • 2 tablespoons rhubarb syrup
  • 1 tablespoon rose syrup
  • 1 ounce vodka of choice
  • 1/4 cup crushed ice
  • Lime/lemon soda
  • Lime wedges, to garnish with
Directions
  1. Strawberry coulis: Blend 4 - 5 medium sized strawberries in a food processor or blender with 2 - 3 tbsp water). Can refrigerate for up to 2 weeks.
  2. Rhubarb syrup: Chop up one rhubarb stick into 1/4" pieces. Add to a non-stick skillet with 1/2 cup water, 1 tsp vanilla extract, 1 tbsp granulated brown sugar, and juice from half a lime, and mix well. Heat on medium-low for 5 - 8 minutes, till the rhubarb secretes juice and is soft and shredded. Transfer the mixture to a blender, add another 1/2 cup water, and blend into a purée. Strain to remove the solids. Can refrigerate for up to a month.
  3. Pour the strawberry coulis, rhubarb syrup, and rose syrup into a lowball glass, and stir to mix well.
  4. Add the crushed ice over the mixture. Pour in the vodka and top off the glass with soda. Garnish with lime wedges and rejoice this glorious summer weather! Note - Leave out the vodka for an equally refreshing mocktail experience.
