Ingredients

500 milliliters
gin or vodka

150 milliliters
Campari

500 milliliters
thyme-infused simple syrup

500 milliliters
freshly squeezed and strained lime juice

250 milliliters
freshly squeezed pomelo, tangerine, or grapefruit juice

Sparkling water or dry sparkling wine

Dehydrated lemon wheels, for garnish
Directions

Combine all ingredients (except for the sparkling water or wine) in a non-reactive container, stir well, and chill in the refrigerator for at minimum 6 hours; 12 hours or overnight is optimal.

To travel/gift: Decant into 750 milliliter bottles.

To serve: Pour over ice into a highball glass, top with soda or sparkling wine, and garnish with a dehydrated lemon wheel.
