Fast recipe & perfect vegetarian side. I find everyone has different preferences to amount of lemon & feta. My solution is keep a bit on the side for folks to add as needed! —giradesai

What You'll Need
Ingredients
  • 1 pound Green beans, fresh & french-cut
  • 1/3 cup Olive Oil
  • 2 tablespoons Dill
  • 2 tablespoons Thyme
  • 1 Lemon
  • 4 ounces Feta, block
  • 1 dash Salt & Pepper, for taste & seasoning, as needed
Directions
  1. Prep all ingredients. Trim & wash your green beans. Chop dill & thyme. Zest lemon. Squeeze lemon for fresh juice.
  2. Cut feta block in half, set one half aside and crumble other half.
  3. Boil super salty water. Like the water tastes like the ocean. Once it has been boiling for a couple minutes, throw green beans in and cook for 3-7 min, until the greens turn vibrantly green. Drain green beans and pat dry.
  4. Toss the green beans with the oil, 90% of dill, 90% thyme, 90% zest, 1 tbsp lemon juice, crumbled part of feta, and add salt & pepper as needed.
  5. Place block part of feta in middle, add beans around. Keep remaining lemon juice on side for adding as people need. Top with remaining zest & herbs.
