Fast recipe & perfect vegetarian side. I find everyone has different preferences to amount of lemon & feta. My solution is keep a bit on the side for folks to add as needed! —giradesai
Ingredients
-
1 pound
Green beans, fresh & french-cut
-
1/3 cup
Olive Oil
-
2 tablespoons
Dill
-
2 tablespoons
Thyme
-
1
Lemon
-
4 ounces
Feta, block
-
1 dash
Salt & Pepper, for taste & seasoning, as needed
Directions
-
Prep all ingredients. Trim & wash your green beans. Chop dill & thyme. Zest lemon. Squeeze lemon for fresh juice.
-
Cut feta block in half, set one half aside and crumble other half.
-
Boil super salty water. Like the water tastes like the ocean. Once it has been boiling for a couple minutes, throw green beans in and cook for 3-7 min, until the greens turn vibrantly green. Drain green beans and pat dry.
-
Toss the green beans with the oil, 90% of dill, 90% thyme, 90% zest, 1 tbsp lemon juice, crumbled part of feta, and add salt & pepper as needed.
-
Place block part of feta in middle, add beans around. Keep remaining lemon juice on side for adding as people need. Top with remaining zest & herbs.
