Apple Cheese Salad

We used to call this "Christie Salad" because our friend Christie would bring different kinds of salads using cheese and fruit to many of our potlucks and dinner parties. Over the years it has morphed into our go-to salad with dinner and we usually make it at least once a week. Our kids now call it "Apple Cheese Salad" and my four year requests it almost nightly. The dressing that goes with it really makes the whole dish come together! —mamachef

Ingredients
  • 6-8 cups mixed baby greens
  • 1 English cucumber, sliced into halves
  • 1 large Fuji, Pink Lady or other crunchy apple, cut into bite-sized pieces
  • 3/4 cup crumbled Feta cheese
  • 1/2 cup dried cranberries or cherries
Directions
  1. Add all ingredients into a large wooden salad bowl.

I tired to "edit" the recipe to add the ingredients for the dressing, but it won't allow me to do it, so here is the "recipe" for the dressing, which I really make by feel more than exact measurements:

2 tsp. of chopped shallots
Dijon mustard
Honey
White or golden balsamic vinegar
Kosher salt
fresh ground pepper
Olive oil (make sure to use really good olive oil- I like Olio Carli

I rarely measure the ingredients. I whisk the first four ingredients together and then whisk in the olive oil and add Kosher salt and pepper to taste. It should be a little sweet but still have the flavor of the mustard and vinegar.

Pour over the salad and toss everything together right before serving or you can pour it into the bottom of the salad bowl before making the salad and then toss right before serving.
