Microwave Mushroom Risotto

Stovetop risotto is notoriously labor intensive, but this microwave version gives your wooden spoon a break! Walk away as the rice turns al dente before finishing it off with a generous dusting of parmesan. Creamy, rich, and wonderfully umami, this is the dish you turn to when you need to eat your feelings.

What You'll Need
  • 2 tablespoons unsalted butter
  • 2 cloves garlic
  • 1 cup arborio rice (short grain rice can also work in a pinch)
  • 1 1/4 cups chicken or vegetable stock
  • 1/2 cup white wine
  • 8-10 mushrooms, sliced (shiitake, oyster, cremini can all work)
  • 1/2 cup parmesan, grated
  • salt, to taste
  • black pepper, to taste
  1. Melt butter in the Large Deep Anyday dish. Add the garlic. Cover with the lid (knob lifted).
  2. Cook in the microwave for 1 minute, or until fragrant.
  3. Stir in the rice, chicken stock, wine, mushrooms, and salt.
  4. Cover and cook in the microwave at Power Level 4 for 22 minutes, or until risotto is plump, creamy, and slightly al dente.
  5. Stir in grated parmesan. Season with salt and pepper to taste. Serve and enjoy!
