What You'll Need
Ingredients
  • 1 pound raw chicken breast, skinless, boneless
  • 1/2 cup dill pickle juice
  • 2 tablespoons heavy whipping cream
  • 1 bag Atkins Ranch Protein Chips
  • 2 tablespoons almond flour, super finely ground, gluten free
  • 2 tablespoons flaxseed meal
  • 1/4 teaspoon table salt
  • 1/4 teaspoon black pepper, ground
  • 2 tablespoons canola oil
Directions
  1. In a resealable bag, marinate 1-inch cubes of chicken breast with pickle juice and heavy cream in the refrigerator for at least 4 hours or overnight.
  2. Into a flat bottom bowl, combine crushed chips, almond flour, flaxseed meal, salt and pepper. Drain chicken from the marinade, coat all sides of each chicken piece in the chip breading, place on a baking sheet or plate and spray both sides lightly with canola oil.
  3. Warm an air fryer to 390° for 3 minutes. Spray air fryer basket with remaining canola oil and place breaded chicken cubes into the fryer in a single layer (cooking in batches if needed). Cook for 4 minutes, then flip and cook another 4-5 minutes, until chicken reaches an internal temperature of 165°, and nuggets are browned and crispy.
  4. Divide into two equal portions and serve while warm.
