A rich and delicious breakfast casserole that will impress! Just combine a few basic ingredients together, and bake in the oven. It's perfect for your next brunch. —Dash of Amy

Ingredients

1 cup
onion, finely diced

8 ounces
Cream of Chicken soup (I used campbell's)

1 cup
sour cream

8 tablespoons
melted butter

1 teaspoon
salt (more if needed)

26 ounces
shredded hash browns (thawed)

1/2 cup
shredded mozzarella cheese

1 cup
shredded cheddar cheese (1/2 in casserole, 1/2 on top)

pieces bacon, cooked and chopped (I used turkey bacon)

1/2 teaspoon
black pepper

1/2 teaspoon
parsley
Directions

Combine first 4 ingredients in a large mixing bowl.

Add the hash browns and cheeses, salt, and pepper; mix well.

Add the bacon, mix well, and transfer to a baking dish.
Add 1/2 cup cheddar cheese over the top, and bake at 350 for 45 minutes (uncovered).

Sprinkle top with parsley and serve.
