A meatless Monday healthy and fulfilling salad that I make for my family. The healthy fats fill my kids with the nutrition they need to grow. It is easy to pull together for a quick weekday meal. This can also serve as a side salad for grilled food, pizza, lasagna etc.. —lana46

What You'll Need
Ingredients
  • Salad
  • 3 cups Arugula/Lettuce
  • 1 cup Cherry Tomatoes
  • 1 cup Fresh Mozzerela
  • 1/2 Avocado Chopped
  • 1/2 cup Red Onion Chopped
  • 8-10 pieces Basil Leaves Chiffonade
  • Dressing
  • 1 tablespoon Olive Oil
  • 1 tablespoon White Vinegar
  • 1 pinch Sea Salt
  • 1 pinch Black Pepper
  • 1 pinch Sugar
Directions
  1. Salad
  2. Chop and combine all salad ingredients in a large bowl.
  3. Combine dressing ingredients in a separate bowl and whisk together.

  2. Pour dressing over salad ingredients and mix gently with large spoon.
