Blinis with smoked salmon

Ingredients
  • 150 grams Flour of choice
  • 10 grams Powder baker's yeast
  • 200 milliliters Whole milk (slightly heated)
  • Salt (pinch)
  • 1 teaspoon Brown sugar
  • 2 eggs - seperated
  • 100 grams Smoked Salmon
  • 4 Stalks of chives
  • "Petit frais" (crème fraîche)
  • Butter for cooking
  • Lemons (to eat)
  • Cucumbers (to accompany)
Directions
  1. In a bowl mix the milk, Baker's yeast and the sugar. Stir slightly and let it sit for at least 30 minutes.
  2. Meanwhile, bring the egg whites to a stiff.
  3. Mix the flour and the salt thoroughly. Add the egg yolks and mix with a mixer, adding the milk slowly.
  4. Fold in the egg whites. Cover with a towel and let it rest for one hour to one and half hours.
  5. In a non stick pan, add a little bit of butter. Pour the batter, just a bit. Let it cook two minutes and turn.
  6. To serve: place the Blinis, a spoon of crème fraîche, a piece of salmon and sprinkle with chopped chives. Squeeze some lemon juice and enjoy! I like to serve it with some cucumbers on the side.
