"Petit frais" (crème fraîche)

Directions

In a bowl mix the milk, Baker's yeast and the sugar. Stir slightly and let it sit for at least 30 minutes.

Meanwhile, bring the egg whites to a stiff.

Mix the flour and the salt thoroughly. Add the egg yolks and mix with a mixer, adding the milk slowly.

Fold in the egg whites. Cover with a towel and let it rest for one hour to one and half hours.

In a non stick pan, add a little bit of butter. Pour the batter, just a bit. Let it cook two minutes and turn.

To serve: place the Blinis, a spoon of crème fraîche, a piece of salmon and sprinkle with chopped chives. Squeeze some lemon juice and enjoy! I like to serve it with some cucumbers on the side.
