1 cup
Chopped raisins or other dried fruit of your choosing
1/2 cup
Coconut oil
1/2 cup
Honey or maple syrup
1/2 teaspoon
ground cinnamon
1/2 teaspoon
ground nutmeg
1 teaspoon
vanilla extract
1/2 teaspoon
salt
Directions
Preheat oven to 300° F.
Line a baking sheet with parchment paper.
In a large bowl, whisk together the oil, honey or maple syrup, cinnamon, nutmeg, baking vanilla and salt.
Add the oats and almonds. Stir to coat.
Spread the oats out onto the baking sheet.
Bake for 20 minutes, stirring halfway through. The granola is ready when golden-brown and the almonds have toasted. It may still feel wet, but it will dry as it cools.
Remove from oven and mix in fruit. Press to ramp down the granola and fruit to form clumps of granola. Let cool.
