Spaghetti Squash Bake

What You'll Need
Ingredients
  • 1 pound Ground Turkey
  • 1 medium Spaghetti Squash
  • 2 tablespoons Garlic Salt
  • 8 ounces Bella Mushrooms - Sliced
  • 1 Yellow Onion - Diced
  • 4 Garlic Cloves - Minced
  • 2 large handfuls Spinach - Roughly Chopped
  • 2 Eggs
  • 2 cups Pasta Sauce of your choice
  • 1 1/2 cups Cheddar Cheese - Grated
  • 1 1/2 cups Mozzarella Cheese - Grated
Directions
  1. Preheat oven to 425. Wash your spaghetti squash…yes you should wash it unless it's organic, but even then, you should still wash it. Cut it lengthways and scoop all the seeds out. Drizzle some olive oil over the squash, just enough to coat it, then lightly sprinkle some garlic salt over the two halves, I used about ½ - ¾ Tbsp of garlic salt for this. Then Lay them cut side down onto a lined baking sheet and bake for about 40 min, until you can press the skin and it dents in. Then when it’s done let it cool so you can handle it. Then shred the squash so you get spaghetti-like strands.
  2. While your Squash is cooking you can start on the turkey. Heat a large skillet with some olive oil, about 2-3 tbsp. Then add in your onion and cook until it becomes translucent. Add in minced garlic and cook until it's aromatic, just about a minute, not very long. Then add in the turkey and break it up as much as you can with a wooden spoon. Sprinkle 1 tbsp of garlic salt over the turkey and let it cook completely, continuing to break it up as it cooks. You’ll want to cook it until the liquid is pretty much all gone. Then you’ll add in the spinach and mushrooms, mixing everything together well, and let that cook for about 5 min, stirring a couple of times. Then you’ll add in the pasta sauce, mix everything together, turn the heat down to medium-low, and let it simmer for 10 minutes. Once that’s done let it cool almost completely.
  3. Preheat oven to 400.
  4. Once cooled add in spaghetti squash and mix it all together well, then add in eggs and mix well so they are completely incorporated. Grease a casserole dish, I ended up using a 10x7 and it was a tight fit, so I would suggest using something a little bigger. Pour the turkey and squash mixture into your casserole dish and top with both cheeses, I mixed them together which made it an even spread. Cover with foil and bake for 30-40 min until cheese is melted. Once your cheese is nicely melted, uncover and cook for an additional 10-15 min so the cheese gets a nice color on it.
  5. Let it sit for at least 10 minutes before cutting into it.
  6. Serve and Enjoy.
