These chewy and soft spice cookies were among the first I ever baked, and they remain a family favorite today. The inclusion of coffee granules in this adds a new taste layer that makes them binge-worthy, especially when served warm. —Swara Bhatt

Ingredients
  • 1 cup Unsalted Butter, Softened
  • 2 cups Packed Brown Sugar, Softened
  • 0.5 cups Applesauce
  • 0.25 cups Whole Milk
  • 1 teaspoon Vanilla Extract
  • 3 teaspoons All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 teaspoon Ground Nutmeg
  • 1 cup Chopped Walnuts
  • 1 tablespoon Instant Coffee Granules
Directions
  1. In a large bowl, cream butter and brown sugar until light and fluffy. Add applesauce, beating well after the addition. Beat in milk and vanilla.
  2. Combine flour, baking soda, salt, and nutmeg; gradually add to the creamed mixture. Stir in the walnuts.
  3. Drop by tablespoonfuls 2 inches apart onto ungreased baking sheets. Bake at 350 for 10-12 minutes or until lightly browned. Remove to wire racks to cool.
