Making granola is always a fun process for me to experiment with different ingredients! For this recipe, I use rice bran oil and coconut sugar as the base for wet ingredients. With extra coconut chips and cranberries, they add more texture to this granola recipe. —Gig Tantiwechwuttikul

Ingredients
- Dry ingredients

rolled oats

nuts

toasted coconut chips

dried cranberries

1 teaspoon
sea salt flakes
- Wet ingredients

50 grams
rice bran oil

90 grams
coconut sugar (or brown sugar)

1 teaspoon
baking soda
Directions

For dried ingredients, mix rolled oats and nuts in a bowl and set aside.

For the wet ingredients, put the rice bran oil and coconut sugar in the pot on medium heat

When everything melts and starts to boil, add 1 tsp of baking soda. Mix well and added to rolled oats & nuts.

Bake at 150•c for 20 mins. And lower to 110•c (fan mode) for another 20 mins. Keep flipping every 10 mins. You know when it’s ready when the color will become golden brown. After resting for 10 mins, it should be crispy as you test it.

Add dried cranberries, coconut chips and sea salt flakes!
