Ingredients
  • 1 large head of cauliflower
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 4 ounces cream cheese, cut into small cubes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup pork rinds, crushed (for topping) - Optional
Directions
  1. Prepare the Cauliflower: a. Preheat your oven to 375°F (190°C). b. Cut the cauliflower into bite-sized florets. c. Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5-7 minutes until they are tender but not mushy. Drain the cauliflower well and set aside.
  2. Make the Cheese Sauce: a. In a medium saucepan, heat the heavy cream over medium heat until it starts to simmer. Do not let it boil. b. Add the cream cheese to the simmering cream and stir until the cream cheese is completely melted and the mixture is smooth. c. Reduce the heat to low and gradually add the shredded cheddar cheese, stirring constantly until the cheese is melted and the sauce is smooth. d. Stir in the garlic powder, onion powder, salt, and pepper.
  3. Combine Cauliflower and Cheese Sauce: a. Place the drained cauliflower florets in a large mixing bowl. b. Pour the cheese sauce over the cauliflower and gently stir to coat all the florets evenly.
  4. Bake the Mac and Cheese: a. Grease a baking dish with the butter. b. Transfer the cauliflower and cheese mixture into the prepared baking dish, spreading it out evenly. c. Sprinkle the grated Parmesan cheese over the top. If using, sprinkle the crushed pork rinds on top for a crunchy topping. d. Bake in the preheated oven for about 20-25 minutes, or until the top is golden brown and the cheese is bubbly.
