She gives useful background on each plant, and tackles unusual produce like sunchokes and celery root. We especially love how she uses every piece of the plant, from stem to root, in all forms. It's not a vegetarian cookbook, but even the recipes with meat and seafood are written to elevate the produce itself.
The book is a contender in Food52's Piglet Tournament, which pits 16 of the year's most notable cookbooks against each other, judged by some top chefs and food writers.
