Urgent! A question about a recipe: Sweet Potatoes Anna with Prunes

I have a question about the recipe "Sweet Potatoes Anna with Prunes" from mrsp.
Started making this for dinner guests & mid way through my kid turned out to be sick. Bummer. If I assembled it and froze it ready to go how do you think it would turn out? What kind of cooking time could I expect once it has been frozen?

Can you make it tomorrow? Then it would just need the fridge. If not I thinking freezing will work OK, I would defrost before baking and then just use the cooking time in the recipe. Hope your kid feels better!!!
