You can totally sub 1 cup almond milk and 1tsp apple cider or white vinegar for 1 cup buttermilk in a baking recipe. The lower fat content affects the crumb of baked good slightly, but I can't do milk and I use this substitution all the time with great success. Soymilk, coconut milk, and hemp milk will all work for this as well. Good luck!
