Growing up, my family had a two-tier system for holiday gifts. Acquaintances, far-flung family members, and co-workers got a family Christmas card in the mail. A small circle of close friends and neighbors -- deemed the lucky ones -- got my mother’s freshly baked cinnamon rolls. 

Baking her cinnamon rolls is the most coveted gift my mother gives. Everyone appreciates the care and time that goes into making them -- and also that they are just so damn good.

Edible gifts are personal in a way most purchased presents aren't, no matter how thoughtfully chosen. I’ve never attempted to make the famous cinnamon rolls, but I do love to make my own gifts: Peppermint bark and toffee star in my holiday repertoire.

A good edible gift should be easy to ship or carry, it should taste fantastic, and it should be unusual. Our favorite for this year? Preserved lemons.

Preserved lemons are the Scotch whiskey of the pantry -- better with age and always welcome at a party. Salt mellows out the sweet, intense citrus flavor and dulls the bitterness of the lemon, and preserving softens the peel so it’s easy to dice and add to everything from mashed potatoes to braised lamb. You’ll traditionally find them in Middle Eastern recipes, but don’t stereotype them as such: Take your cues from their flavor -- salty, slightly-sweet, tangy, citrusy -- and mix them into pasta, toss them with salad, or blend them into guacamole.

  

Preserving sounds complicated, right? It’s not: The recipe takes about 10 minutes and the only skill required is slicing citrus. This is an everyman's recipe that yields impressively fancy-looking results (a win-win!).

  

The method is simple (and you can follow along in this video): Cut your lemons into quarters lengthwise, without slicing through the base. Fill glass quart jars with a layer of salt and pack the cut lemons into the jars, pressing slightly to release their juices, and salting each layer. Leave about an inch of space at the top, add some more salt, and seal the jar. Tie a pretty ribbon around the top. If you want to get fancy, include a handwritten recipe (like Israeli couscous with preserved lemons and herbed tuna).

Any jar will do, but we like to use green quart-sized heritage Ball jars. They brighten up the kitchen -- and when the lemons run out, use them as a vase, a water glass, or cocktail shaker -- they're endlessly useful.

I love to make hard toffee with chocolate on top-sometimes with crushed pecans sprinkled on top. (Sometimes not!) Easy to make, just has to be watched carefully. I also love to give Harvest Loaf-with pumpkin, spices, chocolate chips and pecans in it.

I am definitely making the preserved lemons (in fact, I made a small practice jar from your video today). They are amazingly expensive at the supermarket, and once we learned about them, we haven't been able to do without them. I'll definitely try your tuna/fennel salad, and I want to recommend this fantastic, easy chicken dish (from food52, in fact, at http://food52.com/recipes/35813-canal-house-s-chicken-thighs-with-lemon ). My husband took one taste and knew that preserved lemons needed to be stirred into farro -- lovely and subtle. I'd love to learn more ways of using them

How long do the preserved lemons last once you have opened the jar? Do you store in refrigerator once opened?

They should last about a year! I usually store them in the fridge, but if you are planning on using them soon, you can just store them in the pantry or anywhere at room temperature.

Oh, I'm definitely going to try the preserved lemons. But I usually also make a herbal blend with dried herbs from my garden and some kind of flavoured salt like porcini or citrus salt.

Well of course I'm making preserved lemons! Hopefully I'll try some Meyer lemons as well as the usual type. Plus, new adventures in first-time coconut jam, or Kaya, which is like a lemon curd but with coconut. Frankly there must be a way to make it Lemon Kaya and all would be right in the world. Spiced nuts and homemade "nutella" round things out. Those and a luxurious bath :)

I'll be filling them with my Aunt "KaKa's", sugared pecans! Grab your iron skillet and make the best sugared pecans! Toast 3 cups of pecans in a 325 oven. (They toast fast....be careful don't burn!!) As they cool add 1 cup granulated sugar, 2 Tablespoons of water, 1 tsp of cinnamon. Stir the mixture over medium heat until bubbly....cook till "soft ball" stage...(cup of ice water....drop in a few drops off a teaspoon....if it makes a "soft ball"....remove from heat.) Quickly add 1 tsp. of vanilla and then stir in pecans until they begin to firm up. Quickly pour on wax paper or cookie sheet....as they cool break into pieces! Your all done now and you have a wonderful snack to put in your "new green jars! Enjoy!!! Happy Turkey Day and God Bles.

I am making two types of Vanilla extract for gifts this year. One is using Seattle Distillery vodka with Tahitian beans. The other is using Buffalo Trace bourbon with Madagascar Bourbon style beans. Ten weeks so far and you can smell the vanilla through the cork. Looking forward to decanting it into smaller containers in a couple weeks.

Preserved lemon recipe is great with two caveats that I learned at CIA Greystone: 1) after putting in final layer of salt top with boiling water to top of salt before capping jars tightly and placing in refrigerator, and B) Rotate jars top to bottom (turn jars upside down) once a day for the first week (tops down one day, bottoms the next.)

I love to make edible gifts such as lemon curd & a side of scones or pepper jelly with homemade crackers but I also like to include a living gift; a paper white bulb which the recipient can tend to, watch grow & enjoy the delightful scent of when the holidays are over. Oooh, edible gifts are my favorite. I think this year we are going to make a homemade Lemoncello and dukka - If I start it right now, it will be marvelous. Last year we did spice mixes and my favorite snack mix for the desk, the year before we did hot cocoa mixes and soups and brownies.

I am making my aunt's special recipe for coquito. It is a traditional Puerto Rican holiday drink made of coconut and rum... absolutely delicious. It is a family tradition to make a big batch and give away bottles to friends and family. And of course cookies! There's no edible gift like cookies. My mother passed away before I could learn how she made her homemade bread. in the 70's Mom took a Home Extension class & besides acquiring canning skills, her bread was well-known. After much trial & error (memories of my children eating rock hard bread or peeling off the uncook dough) lol I can say my break making skills are well-known. I tell folks NOT to buy bread for their Thanksgiving or Christmas dinner for I will provide it. I love dropping off hot buttery yeast rolls to friends & family. We are making marinated/spicy Vegetables to give away as gifts -- this holiday season. The set of three mason jars (the gift) will offer a variety of these picked vegetables.

My Dad's set of gift jars will mostly include pickled, crudely sliced onions -- his all-time favorite - laced with thin slices of tri-color peppers and peppercorns.

A delightful preserve from my kitchen will be homemade cranberry~cherry sauce (1/2 cranberries to 1/2 dark, sweet cherries), with a touch of fresh Meyer lemon zest, sweetened with my homemade organic vanilla sugar. It's the perfect condiment for cold-weather cooking!

Preserved lemons are a great idea because they're savory and can be enjoyed long after the holidays are over. I may just give that a go this year. I usually do fudge - because, apparently, nobody doesn't like fudge except me! - but I feel like people are overloaded with sweets at this time of year and something different might be a welcome change of pace.

I make different flavored butter logs, like herb and lemon zest, smoked paprika and zest or blue cheese and chives. I wrap them in plastic wrap, then in parchment paper with pretty ribbons. They can be refrigerated or frozen. I make English toffee with macadamia nuts too. My daughter makes chocolate dipped pretzel rods with sprinkles for her friends.

My German neighbor will receive zimtsterne because people far from home need special kindness.

In addition, everyone, near and far, will receive a jar of chutney, jam, or blueberries from our bushes, packed in light syrup; all of the foregoing made when in season. ;o)

I had a huge gift list of support workers before I retired from teaching. So, when I had time in the summer, I picked wild raspberries and made seedless black raspberry jam. It got paired with peach, plum or apple butter for their Christmas gifts and developed a legendary following. Several of them would not share it with their own kids! But, it was the perfect gift--useful, and you didn't have to dust it. :)
