We get asked all the time: What do you cook at home? Here's a little inspiration from our Digital Marketing Manager, Megan Lang.
It's hard to put my love for pasta into words. Pasta is my happy place, my soul mate, my one true love. It's my favorite celebration on a good day and a hug for my heart on a bad day. Plus, it pairs well with my second love: Cabernet.
This weekend, I was inspired by Gena Hamshaw's Spicy Eggplant Pasta and decided to give it a go. I salted sliced eggplant and let sit for about an hour, and then patted the slices dry before roasting with a bit of olive oil. Meanwhile, I sautéed a diced onion with lots of garlic until the onions were soft. I added two cans of San Marzano tomatoes, a handful of chopped basil, dried oregano, and a pinch of red pepper flakes. When the eggplant started to crisp around the edges, I pulled it from the oven, roughly chopped it, and tossed in the sauce. It simmered until my kitchen smelled amazing.

The sauce was great served over al dente pasta topped with more fresh basil and ricotta salata. It was even better the next day served bruschetta-style on crunchy Italian bread. Either way, this definitely makes the repeat list in my household.
