Congratulations! You’ve pushed through the week and made it to Friday. Now it’s time to relax and recharge and reward yourself. How? Well, here’s an idea that’s a little indulgent but comes together in under 30 minutes: Bacon & Egg Fried Cauliflower Rice from Kristin Donnelly’s new book, Cauliflower.
“Some people make pasta carbonara when they’re too tired to cook,” she writes. “I prefer the bacon-and-egg combo with a zip of garlic, ginger, and scallions, so I make fried rice. Using cauliflower rice makes the dish healthy-ish and low-carb, if you’re into that kind of thing.”
If you're short on time, Donnelly advises using premade cauliflower rice from the store. But if you want to make your own, it’ll take just a few minutes to grate cauliflower on the largest setting of a box grater or process it with your food processor.

Once you have your “rice,” cook bacon over medium heat in a large nonstick skillet until rendered, then remove with a slotted spoon to dry on a paper towel. Next, add garlic, ginger, and scallions to your hot pan until fragrant, then the cauliflower. After it’s all soft and tender, make a well in the center, cook the eggs, and stir it all up. Bring that bacon back in and—bam!—you have dinner.
So when your coworkers ask about your Friday plans, go ahead and brag about staying in.
