The green shakshuka is a delight..as is the whole of this fabulous book, I love the wonderful way Israelis are showcasing and innovating foods not only of the region but take away from across ME, North Africa and Persia of which they were forced to flee.

I made this last night for a somewhat skeptical husband (he had never heard of shakshuka) and 2 toddlers. Everyone loved it!!! It's creamy and rich and the fennel is a delightful crunch. We will definitely be making it again. <3

Zaitoun! I loved this book for the way in which this book introduced me to Palestine, its various regions and most importantly its lovely people, how hospitable they are, how they show their warmth and affection through food. And the recipes look and sound like big bang for small bucks in terms of efforts.

How much is 3/4 fluid ounces of cream? How much is 30 grams of butter? I sure would like to try this shakshuka. Am I now required to have two more measuring devices in order to eat? Guess I'll just scramble up an egg or two.

I am old too so I think I can answer this. You can ask google to convert the measurements. However, recipes are just guidelines these are not mandatory measurements. Just add as much cream and butter as you like. It’s ok to use only the spinach you have in the fridge. No one will mind.

I oz butter = 2 Tlb butter
1 fluid oz cream = 1 1/2 Tlb cream
9 oz spinach = a light lb of spinach (which is 10 oz)
1 oz flat leaf parsley = about 1/2 cup chopped parsley
3 1/2 oz leek = 1 smallish leek

You people are the best! Of COURSE I should be using Google; as a rule, I welcome learning experiences . . . but you know those days when you are beset, by cooking, by recipes, by desires, by time, by mortality? I was having one of those. Thanks, all of you, for being kind and saving me! You all were my learning experience for the day, and now I'll never forget green shakshuka!
