Not a baker so doubtful I would ever attempt this from scratch, but Sook Pastry in Ridgewood, NJ is nearby and their Kouign-Amann is fabulous!!!

Ok, you haven’t lived if you never ate KA. I discovered the pastry through word of mouth from one of my wife co-worker. I had one from a french bakery in Kanata (outside Ottawa) and one at a Sunday farmer’s market. I exaggerated a bit earlier, all of you lived already. But KA is to die for…

While traveling in western France, I stopped in Brittany in the small town of Baye. at the local Boulanger. La Boulangerie De Baye - Angélique & Cédric, their Kouign-Amann was life changing. Eating it fresh at the bakery was something I will never forget.

As a semi breton French girl who studied in Lorient (in Brittany), I had my share of kouign amann, my favourites where from Locronan and Pont Aven, taken for "quatre heure " on the Sunday strolls with my breton grand parents with whom I was living as a student. Nowadays, whenever we go there, we always come back with a couple of them, and cider of course. And I actually like to eat the dried up bits leftover, dunk in Earl Grey.... it's my madeleine de Proust.

No, I have tried to love it, but just...don't. I've tried them in Monterey, CA (made by a Breton), in several places in Bretagne, including Douarnenez, but nope. Not for me. I don't care for canelés either. (But, damn, I love the mussels in Bretagne. Moules frites, moules a la crème, moules au vin blanc, ate them every day.)

I was an exchange student living in Brest many years ago and no one thought to introduce me to this delicious thing, native to the region!? Probably a good thing since I gained 20 pounds while living there. I really want to learn to make these!

Had our first KA years ago in Oahu, HI at a chain bakery/cafe, La Tour Cafe, they are all over the island. Before your turn up your nose at “a chain restaurant”, go_and_try_it. They are AH-MAY-ZING and better than any versions we’ve been able to find in the San Francisco Bay Area...even at the fanciest, most “authentic”, French bakeries...shocking but true. Mouthfuls of buttery heaven found in one of the loveliest place on earth!

Vinman's Bakery in Ellensburg, Washington introduced me to the kouign-amman. It was love at first sight. They make them every day. Essencia Bakery in Yakima, Washington sometimes has them at the Ellensburg Farmers Market. Theirs is good, but I'll stay loyal to Vinman's. This pastry was the technical challenge on pastry week in one season of The Great British Baking Show. None of the contestants knew what it was, but I certainly did.

I've had the Dominique Ansel version and fell madly in love. The center is so buttery and luscious that it became an addiction. I see this recipe in the upcoming holiday time off.

One of our bakeries here in Newport Beach-Costa Mesa does Kouign Amann beautifully, Pandor; I have also had it in Paris recently and it remains one of my favorite if not favorite pastries of all time. Breton cake and canneles are next in line. Oui! CB-Newport Beach

I too love these and I can not decide between this and a rum canele. It is the simplicity that almost demands perfection. And that simplicity does not allow you much room for a mistake. Some pastries allow you an incredible amount of range of freedom. Not these.

My favorite at the french bakery in LA where we spent our summers growing up was the palmier. Sadly the bakery has been closed for years, but I just loved those crispy, caramelized layers- not too unlike a kouign amann, but in a puff pastry format!

Apart from how they're shaped and all the sugar, is making kouign-amann much different than making croissants? I'm intrigued by the article's description of needing to know bread better than pastry (check!) but my lamination skills are still not perfect.
