Well timed suggestion for me. I need half and half which I never use but I have a quart of heavy cream and 1% milk. I'll make it work!

Figuring out how to sub heavy or light cream for half and half is pretty simple. Moreover, if I’m out of half and half, I’m probably out of the other refrigerated creams as well. Even better, therefore, for beverages, I’ve been using dried heavy cream: https://www.amazon.com/gp/product/B07S93MZ7M/ref=ppx_yo_dt_b_search_asin_title?ie=UTF8&psc=1. Because it’s dried and shelf-stable, there’s zero waste, and for less creaminess, just use less. I wouldn’t use it for a gratin, but I wouldn’t use half and half for a gratin either. However, the powder works extremely well to add that little bit of creaminess to a tomato sauce.

Just ordered powdered heavy cream - noticed that "heavy cream" is no longer available..just whipping cream that has a much lower fat content and if, you are a baker it really can make a difference.
